Ginger Roasted Bok Choy


1 head of Bok Choy

2 tbsp soy sauce 
2 tbsp rice wine vinegar
1 tbsp honey
1 clove of garlic, chopped
1 tbsp shaved fresh ginger


Slice Bok Choy in half long ways.
Cover Bok Choy in marinade and place on lightly oiled baking sheet. (Save a little bit of marinade to apply half way though baking).
Bake at 300 degrees for 25-30 minutes or until tender stalks and crispy leaves.
